Tuscan Salad with Bleu Cheese and Figs
 
                                    Tuscan Salad with Bleu cheese and Figs
Serves 4
 
1/ 4 cup- Grape seed oil
2TB. - Apple cidar Vinegar
½ TB. – Whole grain mustard
Sea salt and pepper
 
In a mixing bowl, whisk all ingredients until well incorporated and chill until service.
 
For the salad:
3 cups – Mixed greens
6 slices – cooked crisp apple wood bacon
1 large – fuji apple wedges
1/3 cup toasted almonds
4 oz. crumbled bleu cheese
½ Lb. – seedless red grapes cut in half
4 fresh figs - ( can be replaced with dry figs )
 
  1. Light a gas grill to medium hot heat. When hot, spray grates with a little oil and grill apples to make char marks. Pull off for the salad
  2. In a mixing bowl, place the lettuce and the dressing and toss to coat well.On four plates, evenly distribute the lettuce. Sprinkle evenly the cheese, almonds, and the grapes. Then place the bacon, apples, and figs across the lettuce on top to garnish and a nice presentation.
  3. Serve with a smile.
