Banana Chocolate Chip French Toast

My recipe this month is a fun dessert , breakfast or even a brunch item that we ran last week as a dessert that is a confectionary delight. I hope you will make and enjoy as I have. Until next month, eat , drink, and be happy.
                                                           
Makes 1  9x5 inch loaf pan
 
2 cups – all purpose flour
1tsp. – baking powder
1tsp. – baking soda
1tsp.- salt
3 ripe bananas, mashed
1Tb.- milk
1tsp.- ground cinnamon
½ cup- softened butter
1 cup – sugar
2 Eggs
1 cup – Semi or bitter sweet chocolate chips
 
 
  1. preheat oven to 325*. Grease and flour a 9x5 inch loaf pan
 
  1. Sift flour, baking powder, baking soda, and salt in a bowl. Stir bananas, milk, and cinnamon in another bowl. Beat butter and sugar in a mixer until fluffy. Add eggs one at a time, beating well. Stir in the banana mixture until blended. Fold in the flour mixture and then the chocolate chips. Pour into buttered loaf pan.
 
  1. Bake in the oven until a tooth pick inserted comes out clean. About 70 minutes. Cool in pan 10 minutes or so before removing to cool on a wire rack  to slice.
 
 
 
 
 
 
 
 
For the French toast:
 
½ cup – sugar
1tsp. – ground cinnamon
 
Mix and set aside.
 
2 eggs
1cup – milk
1tsp. vanilla extract
½ tsp. – ground cinnamon
Mix together
 
  1. Place a non stick sauté pan on the stove and turn on medium high heat. Take two slices of banana bread and soak in milk mixture, turning to coat well. Pour some melted butter in hot pan and place the toast in. cook on both sides until egg mixture is cooked. Pull out and toss in the cinnamon sugar and place on plate. Repeat as needed.
  2. Serve warm with your favorite syrup, and ice cream.
