Guppy’s baby Arugala Salad

One of our most popular salads. it's quick and easy to make once you have you ingredient list. Enjoy!
                                     

Serves 4

 

1 lb. Cleaned Baby Arugula

1/4 cup- crumbled bleu cheese

1/4 cup- julienne dried apricots

1/4 cup dried cranberries

1/4 cup candied walnuts

4 - red pepper rings

4 - yellow pepper rings

4 - spring onion’s

16 - grape tomatoes

 

 

for the dressing:

 

2 TB. Minced shallot’s

2 tsp. Honey

2 tsp. Dijon mustard

½ tsp. Red chili flakes

½ cup champagne vinegar

3TB. Passion fruit puree

½ tsp ground sea salt

1/4 cup grape seed oil

 

  1. Place first seven ingredients in a mixing bowl and blend.
  2. Whisk in oil slowly until incorporated.
  3. Chill ingredients.
  4. Place four bowl’s out to serve.
  5. Mix arugula with the dressing until well coated, and portion into the four bowl’s.
  6. Divide all other ingredients into the four bowls like a chop salad. You are ready to serve
