Plant City Strawberries with a Grand Marnier Cream

This month's recipe is inspired by Valentines day. I hope you enjoy

Plant City Strawberries with a Grand Marnier Cream

2 pints strawberries (washed , dried and sliced in half ), refrigerate

3 – egg yolks

4 TB.- powder sugar

1 oz.- Grand Marnier

Zest from 1 orange

2 cup’s – heavy whipping cream

In a small mixing bowl

  1. Whisk yolks, sugar, liquor, and zest until yolks become dull and pale in color.
  2. In a small sauce pot, heat heavy cream until it reachesabout 180*  (use a digital or manual thermometer).
  3. Add half of the cream to the yolks at a medium whisk to temper and dissolve sugar.
  4.  Combine the mix with the ramainder of the cream and bring back to 180*
  5. Once you have reached Temp Remove from heat immediately.
  6. Pour in a clean container and set in an ice bath to chill.
  7. Whisk every 5 minutes untilchilled( Sauce should be slightly thick and rich)
  8.  Portion the strawberries into martini glasses.
  9.  Pour the cream mix over the strawberries and garnish with a mint leaf or a chocolate truffle.
