Blue Crab Bread Pudding

                                                                Blue Crab Bread Pudding
Preheat oven to 350*
 
½ Lb. stale bread cubed
½ gallon milk
1 cup heavy whipping cream
2 TB. clam base
1 TB. drawn butter
¼ cup onion (diced)
¼ cup celery (diced)
1 tsp. garlic chopped
4 whole extra large eggs
1 LB. Blue crab meat (drained well )
1 tsp. ground sea salt
1 tsp. fresh ground white pepper
1 bay leaf
1 pinch leaf thyme
2 dashes tobasco
2 dashes worchestershire sauce
1 TB. fresh chopped Italian parsley
 
1 greased  8 x 8 pyrex casserole dish
9 x 12  dish
 
1)      Place bread in a large bowl and set to the side. In a 3 quart sauce pot, place milk ,cream,clam base, and bay leaf and bring to a slight simmer and pull off stove.
2)      Next, in a large mixing bowl, whisk the whole eggs until blended. Temper the eggs by adding half the hot cream mixture whisking rapidly. Pour back into the remaining cream mixture, blend well and then pour over the cubed bread. Fold in well and let it soak. Pull out bay leaf and discard
3)      In a sauté pan, heat the butter and sauté the garlic, onion, and celery. When soft, add all the spices and blend well. Fold into the bread and cream mixture. Fold in the crab.
4)      In the 8 x 8 pyrex dish add the pudding, evening the mixture to cook even. Place that dish in the 9 x 12 dish and pour warm water around the pudding dish half way up the sides to create a double boiler.
5)      Place in the middle of a 350* oven and cook for 1 hour and 15 minutes. After this time shut off oven and let set up another 15 minutes. Pull out, let cool, and then you are ready to cut and serve. This recipe can be prepared a day in advance. Reheat in a 350* oven til warm.
