This month’s recipe is also a Salmon dish, and the reason being I have been able to obtain great quality fish that is great for our Salmon Burger. Hope you enjoy it and we’ll see you next month.
Salmon Burger’s serves 4
1 lb. Minced trimmed and cleaned salmon
1 - whole egg
1/4 cup - minced red bell pepper
1/4 cup- minced yellow bell pepper
1 oz. -dijon mustard
1 tbl.- Minced chives
½ cup - panko crumb’s
1/4 tsp.- Sea salt
1/4 tsp.- ground white pepper
Mix all ingredients in a mixing bowl and let set up one hour. Form into 4 patties.
4 toasted kaiser roll’s
in a non stick saute pan heat and add butter. Dip cakes into panko and saute until golden brown. Turn and cook on other side until fish is cooked through. Place on kaiser roll’s and and serve with herb tartare.
1 oz. - sweet pickle relish
1 oz. - minced shallot’s
3 - whole hard boiled egg’s( minced )
3 - green olives (minced)
1 tbl. - caper’s (minced )
1tbl. - Italian Parsley (chopped)
1 tbl. - chives (minced)
1 ½ cup’s mayonnaise
1 ½ oz. - sour cream
1 tbl. - dijon mustard
mix ingredients well and chill.
